These yummy zucchini pizza bites are one of our favorite snacks using Jar Goods tomato sauce! This time around, we decided to stack them up using a nonstick muffin pan. Zucchini is such a versatile vegetable that is so good for you.
To make this one of your go-to vegetarian zucchini recipes, replace the pepperoni with roasted red peppers and spinach leaves. Just be sure to include a good amount of tomato sauce and savory mozzarella cheese. You can always add your favorite pizza toppings

Spray a 12-cup nonstick muffin pan with your cooking spray of choice. Preheat your oven to 425 degrees.
Place one zucchini slice in each muffin cup. Add a dollop or two of Jar Goods premium Classic Red tomato sauce. Top with shredded mozzarella cheese, and then a piece or two of pepperoni. Repeat the previous steps two more times to create layers of zucchini, tomato sauce, mozzarella cheese and pepperoni.

Top with a sprinkle of grated parmesan cheese.
Bake in the oven until golden brown and slightly crispy. You'll want to be sure the mozzarella cheese is melted. Cooking time is about 15 - 18 minutes. Remove the zucchini bites from oven and let cool.
