Tomato Soup with Grilled Cheese Croutons - Jule's Tomato Sauce

Some nights call for a spoon and a blanket. This is that soup.

It starts the way most good things at Jule's: with a jar of Classic Vodka sauce already doing the work. Add stock, add cream, five minutes on the stove, and you've got tomato soup that tastes like it simmered all afternoon.

We didn't stop there. Grilled cheese, cubed into croutons, floating on top. Buttery, melted, a little crisp on the edges. It's the soup you wanted as a kid, dressed up just enough for tonight.

Few ingredients. Fast dinner. Tastes like Sunday even when it's Tuesday.

Serves 4

Tomato soup Ingredients:

  • 1 jar Jule's Classic Vodka sauce (you can also use our Dairy Free Vodka sauce)
  • 1 ½ cups stock (chicken or vegetable)
  • ¼ cup heavy cream (optional but advised)

How to make the tomato soup:

Pour one jar of Jule's Classic Vodka Tomato Sauce into a deep saucepan. Add most of the chicken or vegetable stock, keeping a little back to pour into the jar to make sure you get every last drop of yummy vodka sauce flavor. Simmer the soup on a low heat until piping hot, about 3-5 minutes. Add cream at the last minute.

To make the tomato soup extra velvety, use an immersion blender.

Grilled cheese ingredients:

  • 4 slices of bread, we used sourdough but pick your favorite grilled cheese bread
  • 2 tablespoons softened butter
  • 4 slices cheddar cheese

Method:

Butter the 2 slices of bread and place butter side down on a heated nonstick pan. Place 2 slices of cheese on each slice of bread. Top each with the remaining bread and spread butter on the top.

After 2-3 minutes, when the underside is nicely browned, flip both and leave for a further 2 minutes until cheese is melted. Transfer to a board and cut into 1” squares, removing any hard crusts.

Pour the tomato soup between 4 bowls and top with grilled cheese croutons. Salt and pepper to taste. If you are feeling fancy, add a little fresh basil and fresh tomatoes as garnish.
