Mini Zucchini Lasagna

You won’t even notice that this lasagna uses zucchini instead of noodles. Featuring our Classic Vodka tomato sauce, it’s flavorful and satisfying. Go ahead, have another serving!
  • 1 large zucchini
  • ½ cup seasoned bread crumbs
  • 1 large pepper (any color will do), roasted
  • 8 oz mozzarella cheese, shredded
  • 1 jar Classic Vodka
  • Olive oil
  • Salt & pepper to taste
  • Grated parmesan cheese

Line an 8 in. loaf pan with parchment paper. Thinly slice zucchini lengthwise. Dredge in seasoned breadcrumbs. Start with a layer of zucchini, red pepper, cheese & Classic Vodka. Repeat for a second layer, ending with a thin layer of zucchini. Sprinkle remaining cheese, olive oil and grated parmesan cheese. Bake at 350 for 25 minutes.

Cool for about 5-10, allowing the cheese to set. Slice and enjoy.
