Classic Spicy Sausage & Peppers

Whether you choose traditional pork sausages or “spice” it up a bit with chicken or even seafood sausage this recipe is so simple and a sure crowd pleaser.

Makes 6 to 8 sandwiches

  • 1 lb sweet peppers (red, yellow, orange) seeded and sliced in strips
  • 2 large sweet yellow onions, cut into wedges
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • 1 ½ - 2 lbs pork, chicken or seafood sausage
  • 1 jar Classic Spicy
  • 6 to 8 rolls (we like Portuguese, but whatever your preference will do)
  • (optional: hollow out rolls to allow for maximum filling)
  • Shredded mozzarella (optional)

Mix peppers, onions, olive oil and salt & pepper. Let rest while you prepare the grill. Prick the sausages with a fork so that they do not burst when cooking.

Heat grill on high for 5 minutes then turn down to medium.

Put seasoned pepper and onions in a make-shift foil dish or grill basket. Cook 10 to 12 minutes until all are soft and slightly charred. Toss occasionally for even cooking. Transfer to plate to rest while cooking sausage.

Turn heat to medium high. Grill sausages directly on grill for 6 to 8 minutes or until cooked through. Turn occasionally to allow for grill marks on all sides. Transfer to a plate and tent with foil to keep warm.

Slice rolls length-wise. Toast, if you like, then fill with sausage, peppers, and onions. Top with a few spoonfuls of Classic Spicy. For an extra treat, top with shredded mozzarella.
