8 oz glass noodles
1 ½ lbs chicken breast, cut into cubes
2 tbsp cornstarch
2 tbsp canola oil
2 cups broccoli florets
1 red bell pepper, sliced
6 large shiitake mushrooms, sliced
1 small onion sliced
1 jar Jar Goods Vegan Vodka tomato sauce
2 - 4 scallions, sliced lengthwise Sesame seeds
Prepare the noodles according to package instructions. Drain and rinse well with cold water to stop the cooking process and prevent sticking. Set aside.
In a large bowl, toss chicken in cornstarch to coat. Season with salt & pepper. In a deep skillet or wok, heat oil over medium. Add the chicken and stir while cooking. After a few minutes of cooking the chicken, stir in the broccoli. Cook for another 4 - 5 minutes adding chicken broth if necessary. Next, add in the red pepper, mushrooms and onion. Stir well to incorporate all the ingredients. Add 1 jar of Vegan Vodka and simmer for another 4 - 5 minutes so all the flavors come together. Add the noodles and combine to ensure they are fully covered in sauce. Garnish with sliced scallions and sesame seeds when serving.
