Pepperoni Pizza Cups

These pepperoni cups go fast so you will want to make sure there is plenty to go around. Make extra and maybe you'll have leftovers for lunch the next day. Simple and fun to make. Satisfying and delicious to eat.

  • 2 tubes refrigerated pizza dough
  • 1 jar Classic Red tomato sauce
  • 6-8  ounces shredded mozzarella cheese
  • 24 pepperoni slices

Preheat the oven to 400 degrees. Lightly brush two 12 cup muffin pans with olive oil or cooking spray. Roll out dough, one tube at a time. Using a pizza cutter or sharp knife, cut the first tube into 12 pieces. Lightly stretch each piece of dough into the muffin tins. Make sure each piece is stretched enough so that it can be filled after partial baking.  Repeat steps with the second tube of dough. Bake each muffin tin for 6 - 8 minutes, until golden brown.

Remove cups from the oven. Each dough should be a cup to be filled. Spoon a generous teaspoon of Classic Red into each muffin cup. Then add a small handful of shredded mozzarella cheese to each cup. Finally, top each cup with one or two slices of pepperoni.

As always, add more or less mozzarella cheese or Classic Red depending on your preference.  Return to the oven and bake the pepperoni pizza cups for another 6- 8 minutes to allow the cheese to fully melt.

Feel free to add your favorite pizza toppings like sautéed spinach, sliced mushrooms, or sliced cooked Italian sausage. It's really about the Classic Red!
