Braised and Pulled Chicken

We call this fresh yet hearty Classic Vodka Braised & Pulled Chicken a "recipe-ish" because frankly, you don't need to measure anything.  You can sub any ingredients you'd like, such as cannellini beans or yukon golds!  Just wing it and treat yourself to a comforting dish with zero fuss!

  • Chicken Breasts
  • 1 jar Classic Vodka
  • Sun-dried tomatoes, packed in oil
  • Olive Oil
  • Fresh baby spinach
  • Other ingredients of your choice :)
  • Rice, noodles, pasta, vegetable noodles

Heat olive oil over medium high heat in a Dutch Oven or any heavy pan with a lid. Sear chicken breast on both sides until browned. Add the entire jar of Classic Vodka and a heavy splash of water (Tip - use the water to rinse out your jar to get every last bit of sauce!).  At this point, add in any additional ingredients you'd like that take some time to cook, like potatoes or carrots. Let simmer over low heat until chicken is tender and cooked through, 90-ish minutes. If using a Dutch oven, you can pop it in the oven at 325-degrees. In the meantime, slice your sun-dried tomatoes and wash your baby spinach. 

When chicken it done, take it out to cool a bit. Toss in the sliced sun-dried tomatoes, spinach, and any other quick cooking ingredients you'd like. Chop up, shred your chicken and toss it back in the pot. Combine and simmer together for a few minutes. 

Serve over your rice, noodles, pasta, or vegetable noddles.

Also, try this recipe in your slow cooker. After you add in the sun-dried tomatoes and spinach, just keep it on low for a few minutes to warm them up and let these ingredients mingle!
