Cannellini Bean Crostini

A super simple and tasty appetizer that just happens to be vegan.

Ingredients:

  • ¼ cup extra virgin olive oil, divided
  • 1 15oz can of cannellini beans, drained
  • ¼ cup Classic Red
  • ½ baguette, cut into ½“ slices
  • 1 garlic clove, peeled
  • Salt and Pepper
  • 1 tablespoon parsley, finely chopped

Serves 4-6 as an appetizer

Method:
In a small saucepan, heat 1 tablespoon of the olive oil on medium and add the beans. Gently fry for 2-3 minutes and then add the Classic Red and cook for a further minute until thoroughly mixed and heated through.

Meanwhile, brush the slices of baguette with olive oil and toast. Once toasted, rub each slice with the garlic clove. Top each slice with a tablespoon of beans, drizzle with a little olive oil and season with salt and pepper. Sprinkle some parsley on top and serve immediately.
