Delicious eaten hot or cold, this ultimate vegan comfort food is served over thick, crusty garlic bread.
1 cup Classic Red
1/2 pound green beans, trimmed
1/4 cup water
1/2 teaspoon crushed red pepper flakes
1 loaf thick sliced country bread
Olive oil
1 clove garlic, peeled
Salt
Pepper
Preheat oven to 375 degrees. Put the slices of bread onto a cookie sheet and put them in the oven, flipping once and allowed to crust over just slightly. Meanwhile, combine Classic red, green beans, water, and crushed red pepper in a sauté pan. Simmer over medium heat for 15 minutes, until the beans are tender. While beans are cooking, remove bread from oven. Rub garlic clove over both sides of each slice of bread. Brush each side with olive oil. Return to oven and allow to toast to your preferred doneness. Serve beans over top the bread slices.
